Hubby has made this recipe hundreds of times. It is one of my favorite recipes, and I hope it will become a new favorite of yours!

I list the weight for this one as he finds it easier to do the dressing for this creamy chicken salad recipe by weight on a kitchen scale. Because people had asked, he converted to the traditional cup measurement for me. I list both below.

This is going to become one of your favorite chicken salad recipes. Don’t believe me? Read the comment section.

This is not a simple recipe, but it is easy to make. By that I mean there are wonderful flavors that come together between the dressing and the chicken salad ingredients making it like no other chicken salad recipe you have ever eaten – it really is next level and not a classic chicken salad recipe.

This is one of my favorite cold salads; a delicious recipe at any time of the year.

Tips and variations for making this delicious chicken salad recipe:

● Hubby recently bought a sous vide cooker (because we needed another kitchen gadget in our house *insert eye roll*) and made the chicken for this recipe with the sous vide cooker instead of making poached chicken. The chicken turned out very soft, very tender, and the chicken salad was still excellent. I prefer the poached chicken breasts but if you have a sous vide cooker and make your cooked chicken that way, it works too! You can make the chicken ahead of time.

● We use dried dill weed. Use three times as much fresh dill weed if you prefer fresh.

● I have never used miracle whip in this recipe and do not recommend it.

● I have never used honey mustard instead of Dijon mustard in this recipe and do not recommend it.

● I have not used rotisserie chicken, leftover chicken, a whole chicken, or chicken thighs on this chicken, and do not recommend any of them. If you prefer dark meat to white meat, you may want to try poaching boneless chicken thighs. I have not done so myself, however.

● There are no red grapes, green grapes, or dried cranberries in this recipe. I have never added any but from comments on this recipe on Pinterest, I’ve had people say that they have added grapes and liked it. Remember that they will make this recipe sweeter.

● We have used plain sunflower seeds and honey sunflower seeds in this recipe many times. The honey flavored gives a touch more “sweet”, both are excellent choices.

● People have used this inside a buttery croissant, on a bed of lettuce (lettuce cups), or a bed of greens, or homemade chicken salad sandwiches.

● All the basic ingredients for this chicken salad recipe should be easily found at your local grocery store.

● Refrigerate all leftover chicken salad in an airtight container.

How good is homemade chicken salad good for? ›

It's tempting to stir up a big batch so that we can enjoy leftovers for a few days. But how long is it safe to keep chicken salad on hand? The short answer is to store chicken salad in a sealed container in the fridge or cooler for no more than four days.

Why does my homemade chicken salad get watery? ›

Choose low-moisture ingredients whenever possible. Select boneless, skinless chicken breasts over thighs, and opt for low-sodium canned chicken when bulkier meats are called for. Soak up the moisture. Try toasting your nuts, fruits, or vegetables before adding them to the salad.

How do you make chicken taste more flavorful? ›

Marinating is good for flavouring and tenderising your chicken at the same time. It's best to marinate your chicken overnight to give the flavours plenty of time to infuse. A faster way to add flavour is to simply brine your chicken in salty water prior to cooking.

What should you not do in the preparation of chicken salad? ›

To ensure that your chicken salad tastes the way that it should, you should avoid using overcooked or dry chicken in your recipe. Unfortunately, as we cook chicken, the moisture of the bird slowly evaporates.

Why do restaurant salads taste better than homemade? ›

Restaurants salt their salads.

This resulted in every bite tasting vibrant and flavorful. "Season your salad just like you would anything else," Simpson said. "Salt is a big difference between salads at home and salads in a restaurant." This doesn't mean you have to make your salads salty!

What can I add to my salad to make it better? ›

Add one or more of these protein-rich foods to your salad:
  1. lean meat: chicken or turkey breast, lean steak.
  2. lower-fat cheese: light cheddar, Swiss, mozzarella, feta, goat cheese.
  3. legumes: kidney beans, lentils, chickpeas, white or black beans.
  4. eggs: hard boiled.
  5. soy products: cubed tofu, edamame.

How do restaurants get their salads so crisp? ›

The Keys to Crisp Lettuce

Lettuce actually needs a good amount of airflow, in addition to a bit of moisture (but not too much!), in order to stay crisp. That's why restaurants store their lettuce in special perforated bins that allow for air circulation while it's held in the fridge.

Is it OK to eat chicken salad everyday? ›

Absolutely — chicken salad can be healthy. Just how healthy comes down to the ingredients used, the portion eaten, and the other foods it's paired with to make a meal.

How many days can you keep homemade chicken salad? ›

Generally, chicken salad will only last three to five days, according to the U.S. Department of Agriculture (USDA). You must store the chicken salad in the fridge to maintain its freshness. As a refresher, the fridge should be set at 40 degrees Fahrenheit or below per the USDA.

Is chicken salad actually healthy? ›

Definitely — chicken salad is full of lean proteins, minerals, and vitamins. It is low in sugar, carbs, and fiber while high in protein. Therefore, this low-calorie salad is good for your health.

What to do if you put too much mayo in chicken salad? ›

To offset the creaminess (and potentially wetness) of too much mayo, try adding in more of whatever crunchy element you were using. Celery and red onion are some of the most common ones, but you can also try chopped red peppers, bacon bits, carrots, cabbage, apples, chopped nuts, and more.

How do you thicken chicken salad? ›

Use Greek yogurt or mayonnaise: Greek yogurt or mayonnaise can be used as a base to thicken chicken salad. Greek yogurt is a healthier option, as it is lower in fat and calories than mayonnaise, but both will provide a creamy texture.

Why is my chicken salad so thick? ›

It can become too thick if not enough dressing or liquid is added to the chicken salad. To fix it, try adding more mayonnaise, Greek yogurt, or other dressing to the chicken salad.

Why does my chicken salad have no taste? ›

Citrus juice and zest

Citrus juice does wonders to brighten the flavor of foods — including lackluster chicken salad. The acidity in citrus juice balances out the fat in the mayonnaise dressing while adding a tangy pop of flavor. The extra moisture from the juice can also help to make the salad tastier.

How do you make chicken less bland? ›

Marinating not only adds flavor, but the combination of healthy fat and acid in most recipes also helps tenderize the meat. A good marinade is roughly three parts oil to one part acid, plus salt and other seasonings like spices, crushed garlic, or a little natural sugar.

How do you perk up chicken salad? ›

There's a lot you can do with a good basic recipe for chicken salad. Add minced fresh herbs like parsley, chives, basil, or tarragon. Add fresh grapes for juicy little bursts of flavor. Add cooked pasta to stretch the chicken salad into a larger meal.

How do you make salad less bland? ›

Use anything your heart desires. Herbs, fruits, peppers, change your olive oil or try sesame, hazelnut or other traditional nut oils. Also try our variety of basils: Large Green, lemon-basil, spicy Thai, etc. For a touch of acid without being too aggressive, try Rivesaltes vinegar or cider.
