Our last book club we met at a popular restaurant here in southern California called WoodRanch Grill. I've been a handful of times and have loved everything I've ordered from the menu. One of my friends suggested I get the peanut slaw that night. Peanut slaw? It sounded just like what I was craving...even though it was a late evening and usually a time when one would order dessert, I wanted something savory. This Peanut Slaw was IT.
It really hit the spot. I loved that it wasn't heavy and greasy. It wasn't full of a ton of sodium, spicy spices or even very many calories (if any). It was perfect for an evening snack. My friend, who highly recommended it, told me how her husband LOVES this stuff. While he was on a diet he would always order this peanut slaw and had big success at losing weight. It comes in large portions so it leaves you FULL and satisfied. There are so many benefits to this salad- but the biggest one is it is really incredible.
I make this peanut slaw by chopping all my fresh veggies and herbs. Then in a separate bowl I add the vinaigrette ingredients and wisk until the sugar is all dissolved.
TIP: Do NOT mix this salad until you are ready to serve. It can sit for up to an hour on the cabbage/veggies mixtures. And really, you can store it in the refrigerator just like any other leftovers. But the vinegars and acids cause the crunchy cabbage and vegetables to wilt. So while it will still taste really yummy, the textures and crunch won't be there.

Also, black sesame seed can be tricky to find. I didn't pick them up at a target or walmart,I had to go to a grocery store and found them easily in the spice section. If you don't want to spend the time looking for them, white sesame seeds will be great!
For presentation serve this peanut slaw in the beautiful purple cabbage you bought! I like to use the leaves closer to the center. They are a bit smaller, more firm,and the perfect serving portions. This peanut slaw would be wonderful for lunches as-is, or serve as a side!

Ingredients
- 16 ounces cabbage bag
- 1 ½ cup chopped purple cabbage
- ¾ cup celery chopped
- 2 green onions chopped
- 1 cup peanuts
- ¼ cup cilantro
- ⅓ cup red wine vinegar
- ⅓ cup oil
- 1 ½ TBS sugar
- ½ teaspoon seasoning salt
- ½ teaspoon garlic powder
- 1 teaspoon black sesame seeds or white
Instructions
In large bowl combine chopped ingredients, peanuts and cilantro.
In separate bowl, whisk together red wine vinegar, oil, sugar, seasoning salt, garlic powder and sesame seeds until sugar is dissolved and ingredients are incorporated.
Serve in purple cabbage cups!
Notes
I found black sesame seed at a grocery store (not walmart or target).
Use the purple cabbage leaves closer to the core of the cabbage if possible. They are smaller and hold their shape really well!
