ginger garlic soup recipe | ginger and garlic veg soup with kitchen scrap broth with detailed photo and video recipe. soup recipes are one of the easy and simple starters or appetiser recipes. these are generally served just before the main meal to improve appetite and also digestive juices are activated. but these days, soup recipes are also given as remedy or immunity boosters and the ginger-garlic soup recipe is one such simple and healthy soup recipe.
as i was explaining, this recipe is made with kitchen scrap or those unwanted vegetable peels or leaves. basically, any soup recipe is prepared with meat or vegetable broth where vegetables are boiled in water to get the thick water. this broth is later used for different options and soup is one favourite recipe out of it. but instead of using actual vegetables, i have used the peel, leaves and stem of the vegetables which are otherwise useless. we would be certainly not using this for our day to day lunch and dinner but can be used to make a healthy broth and use it for soup, curry or even to prepare a bowl of flavoured rice out of this broth.
furthermore, some more additional tips, suggestions and variants to the ginger garlic soup recipe. firstly, the use of broth in this recipe is critical. you may use a choice of broth like meat, chicken or even bone-based stock for this recipe. being a vegetarian, i have been sicked to the vegetable broth, but you may use others as per your choice. secondly, it is handy to prepare this broth in large quantity and use it for different kinds of recipes. apart from using it for soup, my other personal favourite recipe using broth is pulao or flavoured rice. lastly, as an extension to this soup recipe, you may add soy sauce, chilli sauce and even dumplings to prepare it as asian soup.

Ingredients
for vegetable broth:
- 3 cup vegetable scraps
- 5 cup water
- ½ tsp salt
for soup:
- 3 tsp oil
- 1 inch ginger, grated
- 4 clove garlic, finely chopped
- ½ onion, finely chopped
- 1 carrot, finely chopped
- ½ capsicum, finely chopped
- 3 tbsp sweet corn
- 3 tbsp cabbage, finely chopped
- ½ cup cornflour slurry
- ½ tsp salt
- 1 tsp pepper, crushed
- 2 tbsp spring onion, chopped
Instructions
how to prepare vegetable broth or stock:
firstly, in a large vessel take3 cup vegetable scraps. i have used peel of onion, carrot, potato, capsicum, cabbage, cauliflower, radish, spring onion, ginger and garlic.
add½ tsp salt and 5 cup water.
boil for 15 minutes or until the vegetables release their flavour.
drain off the vegetables and vegetable broth is ready. keep aside.
how to prepare veg soup using vegetable broth:
firstly, in a large wok heat 3 tsp oil. add 1 inch ginger, 4 clove garlic and½ onion. saute slightly.
add1 carrot, ½ capsicum,3 tbsp sweet corn and saute slightly.
now add prepared vegetable stock and boil for 5 minutes. you can also use water if you are looking for an alternative.
once the flavours are absorbed, add3 tbsp cabbage.
also, add ½ cup cornflour slurry and boil for 2 minutes. to prepare cornflour slurry, mix 2 tsp cornflour in ½ cup water.
once the soup thickens add½ tsp salt, 1 tsp pepper and2 tbsp spring onion. mix well.
finally, enjoy ginger garlic soup to get relieved from cold, cough and fever.
