When you slice into this delicious Georgie peach pie, don't be surprised by the gap between the filling and the top crust. This happens when a pie is baked at high heat because the crust sets before the fruit in the filling has cooked down. It's worth it, since the high heat also helps the bottom crust get nice and crispy. The finished pie is served with Bourbon Whipped Cream — it takes just minutes to make, and the booze-spiked topping flatters the peaches like nothing else can.

Ingredients

Crust

  • 2 2/3 cups all-purpose flour

  • 2 teaspoons sugar

  • 3/4 teaspoon kosher salt

  • 1 stick (4 ounces) cold unsalted butter, cut into 1/2-inch pieces

  • 1/2 cup plus 1 tablespoon (4 ounces) cold solid vegetable shortening

  • 1/2 cup ice water

Filling

  • 8 large, ripe but firm peaches (3 1/2 pounds)

  • 3/4 cup sugar

  • 1 1/2 tablespoons fresh lemon juice

  • 1/4 cup plus 1 tablespoon all-purpose flour

  • 1 1/2 tablespoons unsalted butter, thinly sliced

  • Egg wash made with 1 egg yolk mixed with 2 tablespoons water

Bourbon Whipped Cream

  • 1 cup heavy cream, chilled

  • 1 tablespoon bourbon

  • 1/2 teaspoon sugar

  • 1/4 teaspoon pure vanilla extract

Directions

Make the dough

  1. Gather the ingredients.

    In a food processor, pulse the flour with the sugar and salt until combined. Add the butter and shortening and pulse until the mixture resembles coarse meal.

Make the filling
